Semolina Bread (in the Bread Machine)

I bake bread all year long. When the weather turns warm, I tend to bake bread at night, when it's cooler. Sometimes I'll bake in my gas grill. That works really well, but when it's crazy hot outside standing around a hot grill, even for a little while, isn't a lot of fun. On the other hand, a bread machine doesn't throw off much heat. When I want a loaf of bread for sandwiches, tossing ingredients into the bread machine makes a lot of sense. It's better than heating up the house so I can have cold sandwiches.

Makes 1 loaf

  • 1 teaspoon instant yeast
  • 1 tablespoon sugar
  • 2 cups (9 ounces) all purpose flour
  • 1 cup (6 ounces) semolina flour
  • 1/4 cup dry nonfat milk
  • 1 teaspoon salt
  • 1 1/4 cup water
  • 2 tablespoons unsalted butter
  1. Put all the ingredients into your bread machine in the order recommended by your bread machine's manufacturer.

  2. Set the machine for a light crust, regular bread.

  3. When the bread is done remove it from the machine and let it cool completely on a rack before slicing.
