Cate Tsahalis' African Kale Dish has all the traits of a contest finalist -- this recipe is unique, flavorful, and so easy to make. Never in my life would I think that such a peculiar list of ingredients would mesh so well together. No matter what the occasion, this recipe is versatile and mild enough to please even the pickiest of palates. The ginger is the star of the show and a great complement to the peanut butter, while the jalapeno adds a welcome heat that cuts through the richness of the sauce. You’ll never feel as satisfied with your cooking as you do after you serve this dish -- an exotic, nourishing African recipe that's rich in flavor. The simplicity and ease with which it's made can be our little secret!
My brother was given this recipe by a fellow Peace Corps volunteer while living in Tanzania. I've made this dish for countless family and friends, and everyone, regardless of culinary tastes has loved it! If you're cooking for a large group, it's very easy to double this recipe. It's also a wonderful recipe to have handy since it is vegan and gluten-free.
