Your Best Ideas for Tomatoes

It’s here! The brightest time in our produce-filled summers: tomato season. We're surrounded on all sides by tiny Sweet 100s and Black Cherries, golden Yellow Taxis and blush-colored Brandywines. What are your favorite varieties?

Tomatoes have a hint of umami -- a deep savoriness usually reserved for meats, mushrooms, and cheeses -- which is an unusual quality for a fruit. This characteristic gives tomatoes a versatile range in the kitchen. You'll find us stuffing them in tarts, stirring them in jams, tossing them in salads, and blending them in soups. And the current abundance of these jewel-colored treasures allows us to experiment with them in interesting new ways.

    rufffamily says: I look forward to "fresh from the garden" tomato sandwiches every year! I toast bread, slather some real mayo (no imitations at our house) & layer freshly picked tomato slices on the toast, and voila! Enjoy! Simple, yet completely satisfying! I enjoy it on gluten free bread for lunch, with sliced cucumbers on the side. Delicious!

    tbritton says: I made a chunky skillet tomato sauce for a lasagna with a batch of heirloom tomatoes I purchased at the farmer's market. I did a rough chop, sauteed them with garlic in olive oil, added a small can of tomato sauce and some oregano. Quick and easy.

I had purchased tomatoes and eggplant at the Franklin Farmers market and needed a quick lunch. I have posted this recipe with photos on my blog but will also upload the recipe here. It's quick, easy, local and fresh! I look forward to reading the other recipes added and trying them out!
